Reading an invoice is a guess, however good a one. So it arrives held: the supplier's own wording, what we read it as, and the cost that would follow. You confirm the invoice, and only then do prices move. Delivery and tax are set aside for you, never mapped to food.

The original wording, unchanged and kept forever. The package we resolved and how. The unit cost that follows. And where we are not sure, we say so instead of guessing — a case with no size on it is a question for you, not a number we invent.

Gross food margin only — ingredients against selling price. It excludes labour, rent, fees and overhead, so we never call it profit. And it is a figure, not advice: what you charge stays your decision.
